I found this recipe about a month ago, and have made a variation of it (see below photo) twice already due to its wonderful flavors and easy preparation.
Cajun Crab Stew
(6 – 8 servings)
- 1/2 stick of butter
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1/4 c. all purpose flour
- 2 cans of chicken broth
- 1 pint of half & half
- 1 package of frozen corn
- 1 pound of crabmeat, drained
- 1/2 tsp. white pepper
- 1/2 tsp. dried thyme
- 1/4 tsp. cayenne pepper
- Melt butter over medium heat, saute onion & garlic until onion is transparent.
- Whisk in flour and cook about two minutes.
- Carefully whisk in broth and bring to a boil. Mix in corn and all seasonings. Reduce heat and simmer about 15 minutes.
- Stir in half & half, crabmeat and heat thoroughly. Serve with fresh bread or popovers.
